A lively pop of red berries with a dry finish.
The native yeasts from the Pinot Noir and Merlot play back and forth as to who will be playing “first chair” on any given day. Winemaker Birgit Wiederstein also says, “eat what you like” with it! Clay and limestone soil (similar in nature to Burgundy’s soil) help the wine stay lively.
Birgit also does some foot tramping of the grapes herself!
