Creamy with a subtle sweet character.
Made by Sakata Shuzo in the Yamagata prefecture (also naturally soft and sweet well water). The rice is milled down 55%. This is bright and clean, which allows no place for imperfections and off flavors to hide.
Currently, the president of this company, Shoichi Sato, takes the leading role as the Toji, or master brewer, conducting the brewing process with dedication and uncompromising ways.
