This rosé comes from Spain’s Santiago Ijalba, who pushed his name together to create his estate Bodegas Santalba. After creating beautiful Rioja wines for decades, he is now joined by his son Roberto, who studied at UC Davis’ renowned oenology program.
Father and son have different approaches to winemaking. Santiago’s focus is on “balance and elegance,” while Roberto’s is on “expression of the grape,” according to himself. However, both use indigenous yeast for spontaneous fermentation with no other yeast added.
Ermita San Felices is primarily Santiago’s label and named after the area the grapes are grown. It is high in the hills with the gorgeous Saint Felices Chapel sitting on top like a cube of cheese on a toothpick.
