August puts us in beach mode and we needed a cocktail to match that tropical island vibe, so last weekend we went with some Pineapple-Lime Tequila Coolers. This recipe really could not be easier; try these out and have the best beach bash ever!
Pineapple-Lime Coolers
- 4 cups pineapple juice
- 1/2 cup lime juice
- 6 tbsps simple syrup
- 1/2 cup Espolón Tequila Blanco ($25)
- Lime wedges for garnish
Mix pineapple, lime juice, agave/simple, syrup and tequila. Pour over ice and garnish with pineapple chunks and lime wedges.
Pro tip: Freeze chunks of pineapple first and use them like ice cubes without watering down your libation. Then eat them for an extra boozy treat!
