Jenny started working with Domaine de La Patience back in 2000 right after Christophe took a hold of the reins of his family’s domaine. After Christophe took over, one of the biggest changes he made was to go organic in 2007: “I realized I needed to stop poisoning myself with the chemical treatments we were using, as I felt worse and worse when working in the vineyards.” Growing the original domaine from 15 hectares to 100 hectares he now has certified organic wines across the Costières de Nîmes and Coteaux du Pont du Gard, two neighboring AOCs with distinctive terroirs and a lingering scent of La Patience, the wild, aromatic Mediterranean herb that gave its name to the estate. With its stone building from 1930 keeping the wines cool Christophe has been making changes to his vinification methods and working towards less additives.
This Chardonnay is sustainable, organic and vegan with tasting notes of soft peaches, florals, a drop of honey with a fresh, clean finish- a solid wine to have on hand for a ‘house’ bottle. It pairs incredibly with nearly any dish containing poultry or fish along with salads, eggs, cream and herb sauces and of course alone in a glass. Snag a bottle online or in the shop!
