Juan Ledesma’s definition of terroir is inclusive of the people and the culture of the region and he may even consider himself a musician first and winemaker second. Juan is farming and buying grapes from his cousin and then composing music for his wines. He records the music and puts a transducer INTO THE TANK and it plays the music for the wines as they sit. It’s actually kind of like battonage, or stirring, which increases body and complexity in the wine but at a molecular level.
