Old Cuban Cocktail
Originally from The Bitter Truth
- 1 oz. simple syrup
- .75 oz. fresh lime juice
- 6 or 7 leaves of mint
- 1.5 oz. of El Dorado Cask Aged 3-Year White Rum
- 1 dash of The Bitter Truth Aromatic Bitters
- 2 oz. of Domain Collin, Crémant de Limoux
Gently muddle the simple syrup, lime juice, and mint. Add rum and bitters. Shake with ice. Strain into champagne flute then top with the sparkling wine.
French 75
From “The Joy of Mixology” by Gary Regan
- .5 tsp. simple syrup
- .5 oz. fresh lemon juice
- 1 oz. of Koval Dry Gin
- 4 oz. of Duc de Romet Champagne
In a collins glass filled with crush ice, build in order then lightly stir.

- 1.5 oz. Ruby Infantado Port
- 4 oz. Castillo Perelada, Cava Brut Reserva
Build in order in champagne flute.
