A couple weeks ago we tasted some Mediterranean treats in the shop and there was a walnut spread that we just couldn’t ignore. We recommend this one with our Domaine Guion Bourgueil “Cuvée Domaine” 2012 ($17). Serve this combo at your next get together and you’ll be lauded all night.
Walnut & Chive Spread
- 1.5 cups raw walnuts
- 1/4 cup olive oil
- 1-2 tbs dried chives (depending on your taste)
- 1/2 tsp fine sea salt
- Dash of black pepper
Combine all the ingredients in a food processor (save some walnuts on the side). Process for a few minutes and make sure everything is ground well. If it’s too thin, add some walnuts and if it’s too thick add a bit more olive oil. Enjoy on crunchy toast or over fresh arugula.
